Tabouleh with pomegranate seeds and apple
This delectable vegan dish is filled with tart apples, pomegranate seeds, gentle spice and fresh herbs

Ingredients
1-2 tart eating apples, diced
2 spring onions, sliced into rings
1 pomegranate seeds removed from the fruit
1Â tsp sumac
2Â tbsp roast pine nuts
50g mint, chopped
50g parsley, chopped
1½ level tsp salt
½ tsp black pepper
juice of 1 lemon
3Â tbsp olive oil
Method
Put all the ingredients in a bowl and season with the lemon juice and olive oil.
Steep for 30 minutes and then enjoy.
