Sesame and coriander kimchi

Ingredients

  • 1 Chinese cabbage (or green)

  • 60g caster sugar

  • 1 tbsp sea salt

  • 60g Korean chilli powder (or red pepper or chipotle powder)

  • 3 tbsp toasted black sesame seeds

  • 60ml soy sauce

  • 4 tbsp sesame oil

  • 2 cloves of garlic, crushed

  • 1 thumb-sized piece of ginger, grated

  • 2 medium carrots, grated

  • 4 spring onions, finely sliced

  • a good handful of fresh coriander, chopped 

  • 60ml water
