Sesame and coriander kimchi
We have a couple of solid kimchi recipes that we like to play around with but this one is our current favourite

Ingredients
1 Chinese cabbage (or green)
60g caster sugar
1 tbsp sea salt
60g Korean chilli powder (or red pepper or chipotle powder)
3 tbsp toasted black sesame seeds
60ml soy sauce
4 tbsp sesame oil
2 cloves of garlic, crushed
1 thumb-sized piece of ginger, grated
2 medium carrots, grated
4 spring onions, finely sliced
a good handful of fresh coriander, choppedÂ
60ml water
