Ingredients
8 slices beef shin, cut at least 2.5 cm thick
plain flour seasoned with salt and pepper
85g butter
2 tbsp olive oil
1 medium onion, peeled and finely chopped
3 celery stalks, chopped
2 medium carrots, peeled and chopped
4 garlic cloves, peeled and finely chopped
1¼ cups white wine
1 tin of chopped tomatoes
300ml chicken stock
3 tbsp parsley, finely chopped
finely grated zest of 1 lemon
