Ingredients

  • 8 slices beef shin, cut at least 2.5 cm thick

  • plain flour seasoned with salt and pepper

  • 85g butter

  • 2 tbsp olive oil

  • 1 medium onion, peeled and finely chopped

  • 3 celery stalks, chopped

  • 2 medium carrots, peeled and chopped

  • 4 garlic cloves, peeled and finely chopped

  • 1¼ cups white wine

  • 1 tin of chopped tomatoes

  • 300ml chicken stock

  • 3 tbsp parsley, finely chopped

  • finely grated zest of 1 lemon
