Baked beans with chorizo
This is one of my favourite brunch dishes

Ingredients
1 tbsp olive oil
200g chorizo sausage
2 onions, about 200g in total
2 cloves garlic
2 tsp sweet paprika
1 ½ tsp ground cumin
1 red pepper
1 tin tomatoes
400g tin butter beans
400g tin baked beans
2 tsp maple syrup
4 eggs
To serve:
150g Greek yoghurt with a little lemon juice and honey
Some fresh flat leaf parsley
A few slices of toasted sourdough per person
