Ingredients
1 whole chicken approx. 1.6kg in weight
For the marinade:
4 cloves of garlic
Juice of one lemon
2 tsp flaky sea salt
For the Peri Peri sauce:
4 red chillies
1 red bell pepper
1 tsp flaky sea salt
1 clove garlic
Juice of ½ a lemon
50ml olive oil
½ tsp dried oregano
Small handful of fresh basil
2 tbsp honey
1 tsp smoked paprika
