Mini mango cheesecakes
Individual mango cheesecakes flavoured with ginger and coconut - a creamy, decadent and tropical dessert

Ingredients
2 tbsp butter, melted
80g gingernut biscuits, crushed
160g cream cheese
4 tbs set coconut milk
1 tbsp honey
zest and juice of 1 lime
400g fresh pineapple chunks
Method
Mix the melted butter and crushed biscuits until completely combined.
Divide the mixture between four glasses or ramekins and press down slightly.
Whisk the cream cheese, coconut milk, honey, lime juice and zest together until light and fluffy.
Spoon the mixture into prepared glasses. Spoon the fresh pineapple chunks on top.
Place into the fridge for half an hour, and serve soon after making.
