  • ½ large sweet yellow onion

  • 3 tbsp butter

  • 90g pancetta, sliced 1/8 inch thick

  • 450g radicchio

  • salt

  • freshly ground black pepper

  • 3-4 sprigs flat-leaf Italian parsley

  • 450g penne (or fusilli)

  • 180ml heavy cream

  • 45g Parmesan, grated
