Location
Just 30 minutes from Dublin Airport and a short drive from the university town of Maynooth, Carton House Fairmont sits on a sweeping 1,100-acre parkland estate in Co Kildare. Once the ancestral home of the FitzGerald family, now the grounds are threaded with walking and cycling trails, championship golf courses and the mesmerising River Rye, which meanders past the house itself. The hotel’s location strikes an impressive balance between seclusion and accessibility, offering guests easy access to Dublin while feeling planets away from city bustle.

Carton House Fairmont wears its heritage with confidence. The original 18th-century Palladian manor is undoubtedly the heart of the property, with ornate plasterwork, high ceilings, and stunning period fireplaces. You could spend hours roaming, taking in the art, the books, the gorgeous original features. Where there are additions, you get a sense of deliberate understated modern design, so the historic house remains very much centre stage. Deservedly so. Dining spaces such as Kathleen’s Kitchen cleverly preserve the gorgeous original features — including 18th-century ovens — blending history with a trendy, buzzy dining experience.

Service
From check-in at the front desk in the main house, service feels polished yet personal. We have a really fun conversation at check-out, and I leave feeling the staff truly connects with the guests. The Fairmont influence is clear in the attention to detail. Housekeeping is faultless, with rooms prepared to an exacting standard that includes evening turndown.

Guest rooms
Our ground-floor king room in the modern wing combines generous proportions with a serene palette and plush textures. Patio doors opened onto the lawns, where squirrels play in the afternoon light, and the outdoor seating makes for a charming morning coffee spot. Inside, the bed deserves special mention: vast, deeply comfortable and dressed in crisp linens with McNutt of Donegal throws for an Irish touch. The thoughtful layout includes ample storage and excellent lighting, with a cleverly placed plug outside the bathroom — a small but invaluable detail. Being able to dry your hair looking in a large, well-lit mirror without stooping is a privilege, not a right. We do have a little trouble with the TV, but it is sorted out quickly by a passing member of staff.

Carton House Fairmont goes far beyond the standard tea tray. Guests are greeted with homemade macarons, fresh fruit and bottles of house lemonade — both pink and cloudy. A playful DIY hot chocolate kit adds a family-friendly twist. Luxury comes via Le Labo’s Rose 31 toiletries, while Jing 100% plastic-free teas and a Nespresso machine gives the necessary caffeine hit. There’s an umbrella, iron, fluffy robes and slippers and cute little cards with quotes from Lady Emily. She sounds like a ticket. The only omission is fresh milk, an amenity increasingly expected at this level.

On the menu
Carton House Fairmont offers 1-Michelin star dining in the magnificent Morrison Room, and casual dining in the buzzy Carriage House and Kathleen’s Kitchen. We dined in the latter, set in the house’s original kitchen, where Lady Emily FitzGerald is said to have enjoyed a warm relationship with her housekeeper. The space retains its vaulted ceilings and historic ovens. The atmosphere is relaxed yet distinctive — we walk past the chefs in the open plan kitchen on our way to our seats — with a menu built around local produce. A featherblade steak was outstanding — tender, perfectly cooked and memorable enough to warrant a return visit. The kids’ menu is impressive too, with a price point that doesn’t make the eyes water. There is a delay between courses that might have more energetic kids fidgeting but it proves worth the wait. Breakfast in the Carriage House combines buffet abundance with à la carte finesse, top-notch.

Activities & amenities
Two championship golf courses attract international players, as well as a spa and wellness centre. Take a dip in the 18-metre indoor pool, while the smallies splash in their own pool. The gym offers cardio and resistance areas while a thermal suite includes a traditional Finnish sauna, steam room and jacuzzi. In the spa, in the old stables, the emphasis is on Susanne Kaufmann-designed treatments and wellness rituals using natural ingredients, sourced on the grounds of Carton Demesne. Children are well catered for with open space to roam and occasional seasonal programming. For the active, there is no shortage of pursuits, from golf and tennis to falconry and fishing. There’s cycling and historical tours, you can order a picnic or a takeaway afternoon tea to take with you on a boat trip.
