New Abbeyleix restaurant and guesthouse Ómós has appointed Patrick Healy as general manager and Alanna Starnes as marketing manager.

Led by chef Cúán Greene, a former chef at Michelin-star restaurants Noma and Geranium in Copenhagen, and Bastible in Dublin, Ómós is a 16-bedroom guesthouse and 40-seat restaurant on 4.2 acres in Co Laois.

The venue incorporates the restored Victorian-era Millbrook House, converted stables, and a new restaurant building. Reservations for both stays and dining go live on March 24.

Before joining Ómós, Patrick Healy was director of food and beverage at Cashel Palace Hotel in Tipperary. Through his experience working at properties including Adare Manor, The Berkeley London, and Le Manoir aux Quat'Saisons in Oxfordshire (a two-star Michelin hotel which has retained its stars for over 40 years), Patrick has gained exposure across food and beverage operations, fine dining service, and luxury hotel management.

Alanna Starnes was most recently digital marketing executive at the Cashel Palace Hotel. She has also worked at The Hardiman in Galway and the five-star Sheen Falls Lodge in Kerry, where she was front office manager. She brings experience across food and beverage services, front office operations, and hotel management.
