  1. Place the farro, spinach, peas, broad beans and asparagus into a bowl.

  2. Dress with olive oil and lemon.

  3. Season with sea-salt and black pepper and toss together lightly with your fingers. Serve quickly while the flavours are fresh!

  • 250g cooked farro

  • 4 tbsp extra virgin olive oil

  • juice of one lemon

  • sea salt

  • black pepper

  • 60g broad beans, cooked

  • 60g peas, cooked

  • ½ cup of cooked spinach

  • 8 asparagus spears, quickly blanched
