  • 1-2 tart eating apples, diced

  • 2 spring onions, sliced into rings

  • 1 pomegranate seeds removed from the fruit

  • 1 tsp sumac

  • 2 tbsp roast pine nuts

  • 50g mint, chopped

  • 50g parsley, chopped

  • 1½ level tsp salt

  • ½ tsp black pepper

  • juice of 1 lemon

  • 3 tbsp olive oil
