Method

  1. Place 12 bun cases into a bun-tin. Preheat the oven to 180°C.

  2. Sift flour into a bowl and mix with the rest of the dry ingredients.

  3. Add the oil and grated carrot and stir. Add the eggs one at a time and stir.

  4. Finally add the vanilla essence and stir once more.

  5. Spoon the mixture into the ready prepared tin. Bake for 15 minutes until golden on top. Test with a skewer to make sure they are cooked through.

  6. To make the cream cheese icing, mix all of the ingredients together until completely combined. Decorate the cooled buns with the icing.

  • 200g self-raising flour

  • 260g caster sugar

  • 1½ tsp baking powder

  • 55g walnuts, chopped

  • 2 tsp ground cinnamon

  • 2 tsp ground ginger

  • 225ml sunflower oil

  • 200g carrots, grated

  • 3 eggs

  • 2 tsp vanilla essence

  • For the cream cheese icing:

  • 200g cream cheese

  • 2 tsp maple syrup

  • 1 tsp lemon juice

  • 1 drop of vanilla essence

  • 30g icing sugar
