Method

  1. Preheat your oven to 180°C and pop 12 bun cases into a 12-hole muffin tin.

  2. Mix the yoghurt, olive oil, eggs, apple purée, banana, vanilla, and honey together.

  3. In another bowl, mix the flours, baking powder, and oats together. Make a well in the centre and add the wet mixture to the bowl. Bring the two together, until smooth. Stir in the cocoa nibs.

  4. Scoop the mixture into your 12 muffin tins and bake for 25 minutes, until golden.

  5. Allow to cool on a wire rack.

  • 50ml light olive oil

  • 2 eggs, lightly beaten

  • 100g stewed and pureed apples

  • 1 small ripe banana, mashed

  • 2 tsp vanilla

  • 3 tsp honey

  • 100g self-raising flour

  • 100g wholemeal flour

  • 1 tsp baking powder, sieved

  • 50g porridge oats

  • 80g raw cacao nibs
