Ireland’s top restaurant ‘over the worst’

The country’s top-rated restaurant “has come through the worst of the recession” after recording increased business last year and in the current year.

Restaurant Patrick Guilbaud is the country’s only two-Michelin-starred restaurant and accounts just filed by the company that operates the exclusive restaurant, Becklock Ltd show that its accumulated profits rose from €201,630 to €221,550 in the year to the end of August last — an increase of €19,920.

This followed the company recording a profit in 2010 of € €201,630, an increase of €17,203 on the year to the end of August 2009..

The abridged accounts provide very limited information but company director, Stephane Robin said yesterday: “I am very, very happy with how the business has performed last year and this year. We are doing well.”

The abridged figures show that the company’s cash during the year increased from €156,151 to €216,286.

The 20-table restaurant is located beside Dublin’s Merrion Hotel and Mr Robin said that the restaurant is back once again to its full staff complement of 40 that it had before the recession.

Among the 40 are 14 chefs and Mr Robin said that the two-Michelin stars “are rewarding for all staff and very good exposure”.

The accounts are signed off on by French head chef, Guillaume Lebrun and Mr Robin, who said: “We haven’t cut corners in the service we provide during the recession and that is why we are alive and kicking.”

“The exchange rate between the euro and the dollar and sterling has been very good for us as well as has been the business from conferences at the Dublin Convention Centre. We are also much more competitive and passed on the cut in VAT when it was made last year by the Government.”

A sample of the restaurant’s á la Carte menu online yesterday showed that a four course meal for two without wine will set you back €260.

The starters include pig with fried quail eggs and fois gras; and lobster ravioli.

The main courses include poached lobster spiced lamb fillet, roast pigeon, and rabbit.

The deserts include warm criollo chocolate biscuit, green apple parfait and dark chocolate tart.

The restaurant also offers more affordable two course and three course lunches for €38 and €50 respectively.
